Ruffle Winner & Yummy Lemon Cake

This is one of my favorite cake recipes. I got it from my friend Christy and I love it!!



1 box lemon cake mix
3/4 cup oil
3/4 cup water
3 eggs
2 T lemon juice
1 small package instant lemon pudding mix

Bake at 350 in bundt pan for 45 minutes

Poke small holes in cake and pour glaze on top

Glaze
2 cup powdered sugar
juice from 2 lemons

Lesson #10/11 lm3 Family Activities/Extended Family

For this weeks lesson we combined #10 & #11. It is the Sunday before St. Patricks so I thought it would be cute do a rainbow treat.
I saw this idea HERE.
I got 5 "rainbows" out of each bag of twizzlers so it came to about $0.30 each


For the Extended Family part of the lesson I made up some cute little postcards. Each YW will mail this St. Patty's postcard to an extended family member.




I thought these were really cute too. I saw this on a friends blog a while ago but haven't attempted to make them yet.

Lesson #40 Self-Mastery

We talked about the "four-keys" described in the lesson manual. I really felt the 2nd key was really important for my girls. To believe in yourself with an understanding that you are a child of God, with Godlike attributes to be discovered and developed.

So for the handout I just made some cupcakes and attached the words "Believe in yourself"
These clear plastic cups are perfect for individually wrapping cupcakes.
I found this delicious oreo cupcake recipe at your homebased mom
who got it from your cup of cake.

Pumpkin Cupcakes with Maple Frosting

I found a template to make cute cupcake wrappers at snow&graham

2 cup all purpose flour
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Kosher Salt
2 tsp Ground Cinnamon
1/2 tsp ground ginger
1 tsp ground nutmeg
1 cup sugar
1 cup light brown sugar lightly packed
*mix dry ingredients first

add to dry mixture
4 extra large eggs
2 cups canned pumpkin puree (not pie filling)
1 cup vegetable oil

Preheat over to 350 degrees. Line cupcake tins with liners. Fill liners 2/3 full of batter. Bake for 20-25 minutes, until toothpick comes out clean. Set aside and cool completely

Maple Frosting
12 ounce Cream cheese (room temperature)
6 TBSP unsalted butter (room temperature)
1/2 tsp Natural maple flavor
1 tsp pure vanilla extract
4 cups sifted confectioners sugar

Mix cream cheese & butter until smooth. Stir in the maple, and vanilla. With mixer on low slowly add the confectioners sugar and mix until smooth.

Top with coarsely chopped heath bar on top of frosting
